Broccoli and Potato Salad Bowl Recipe

This Broccoli and Potato Salad Bowl Recipe is perfect when you don’t want to spend much time in kitchen and still want to eat something that is healthy and delicious. You can prepare this salad from start to end in 30-40 minutes. This recipe is vegan as well as gluten-free.

Lets divide the whole recipe into simple steps. First we will roast the potatoes and broccoli and while they are in oven we can prepare our spiced chickpeas. And then its just left to assemble the salad and enjoy.

Ingredients
  • 4-5 Romaine lettuce leaves
  • 5-6 Cherry tomatoes
  • SPICED CHICKPEAS
  • 1 Cup Cooked chickpeas
  • 1 Teaspoon Oil
  • Salt and pepper to taste
  • Pinch of turmeric powder and paprika.
  • ROASTED BROCCOLI
  • 2 Cup Broccoli florets
  • 1 Teaspoon Oil
  • Salt and pepper to taste
  • ROASTED POTATO
  • 1 Large Potato
  • 1 Teaspoon Oil
  • Salt and pepper to taste
Directions
  • Step 1 SPICED CHICKPEAS
  • Step 2 Heat oil in a pan, add cooked chickpeas salt, pepper, turmeric and paprika.
  • Step 3 Mix everything until chickpeas are coated with all the spices.
  • Step 4 ROASTED BROCCOLI & POTATO
  • Step 5 Preheat the oven to 350°F or 180°C.
  • Step 6 Cut potato into wedges and broccoli into florets.
  • Step 7 In a large mixing bowl add broccoli florets and potato wedges. Add oil, salt, pepper and toss together.
  • Step 8 Spread on a baking sheet sprayed with non-stick cooking spray.
  • Step 9 Bake for 15-20 minutes.
  • Step 10 ASSEMBLING SALAD
  • Step 11 Chop lettuce and tomatoes.
  • Step 12 In a serving bowl add spiced chickpeas, roasted broccoli and potatoes.
  • Step 13 Top it up with lettuce and tomatoes and enjoy!
